Frosting Friday

I have seen all sorts of themed posts on others blogs. I've seen "Wordless Wednesday", "Thankful Thursday," "Wish List Wednesday", and so on...

So as I'm sure you have all discovered, I enjoy baking and cooking, mostly baking though. So I thought I would have a "Frosting Friday"! I always see these fabulous recipes on blogs and think "I need to try that!" I'm not promising that EVERY Friday I'll post a recipe but as I find interesting and enticing recipes I'll share them.


I found this recipe at "Sing For Your Supper". The author of this blog is an opera singer who enjoys baking and wants to one day open a bakery. There are lots of great recipes on her blog! It's so cute too!

I tried the Peanut Butter Chocolate Chip Bars, here's the recipe from "Sing For Your Supper"
6 tablespoons unsalted butter
1/2 cup peanut butter
1 cup sugar
1/4 cup light brown sugar, packed
2 eggs
1 teaspoon vanilla
1 cup flour
1/4 teaspoon coarse salt
1 teaspoon baking powder
1 cup chocolate chips (semi-sweet)
Preheat oven to 350. Lightly grease an 8 x 8″ pan (I doubled the recipe and used a 9 x 13 pan) Whisk together the flour, salt and baking powder. Set aside. Cream the butter and peanut butter together until smooth. Beat in the sugars until combined. Add the eggs, one at a time, scraping down the bowl after each addition. Stir in the vanilla. Stir in the flour mixture. Add the chocolate chips, stirring until combined.
Spread the batter into the prepared pan. Bake for about 30- 32 minutes. Cool completely before cutting.

Here's my attempt at the PB/CC Bars...


They were SUPER easy to bake and delicious. An easy dessert to make for a friend or to bring to a party. Easy, quick, and taste good too! My only note about the recipe would be to let these cool for 20-30 minutes before cutting. They are pretty gooey when they first come out of the oven.

On a side note, I also made these wonderful cookies a few weeks ago. If you like the PB/CC Bars then you'll like these cookies too. The original recipe was just the basic cookie, then I had to jazz it up by adding the chocolate/peanut butter drizzle and the Reese's on top. They are a crowd pleaser!

Reese's Peanut Butter Jumbo Cookies

3/4 cup chunky peanut butter
1/2 cup softened butter
1 cup light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 egg
1 1/2 teaspoons vanilla
1 1/4 cups all-purpose flour
2 cups quartered mini-resses cups

Preheat oven to 375 degrees. Beat peanut butter and butter together. Stir together sugar, baking powder and baking soda, beat into peanut butter mixture. Add vanilla and egg. Slowly add in flour. Then fold in quartered Reese's peanut butter cups. Cover dough and refrigerate for one hour.

Divide dough into 9 pieces, pat into 4 inch cookies (will bake to 5 inch cookies). Bake on ungreased cookies sheet 10-12 minutes. Let cool on awire rack.

Here's the extra "goodness" I added...
After the cookies have cooled, melt chocolate Baker's squares (about 3 squares) and 3 TBSP. of smooth peanut butter in microwave. Then quarter several more peanut butter cups. Drizzle choc./PB mixture over the cookies. Then sprinkle peanut butter cup pieces over the drizzle, before it cools and begins to harden. Let this completely cool before serving.

So these are great, Reese's on the inside and the outside of the cookie! :)
