I hosted bunko at my house this week, everyone had a great time. The theme of course was Valentine's, but the big hit were these yummy cupcakes!! I used the recipe from the fabulous Reese peanut butter cake and change the flavors from chocolate and peanut butter to strawberry and white chocolate. It was delicious! Here's the modified recipe:
1 box strawberry cake mix (Duncan Hines)
1 small box jello white chocolate instant pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs, beaten
1/2 cup milk
1 tsp. pure vanilla extract
12 oz. white chocolate chips (I add a little more...probably about 18 oz...I really like white chocolate!)
Mix all ingredients together in a large mixing bowl, stir in white chocolate chips last. The batter is very thick, I made cupcakes, so I spooned the mix into lined cupcake tins. If you're making this into a cake, then spoon into three greased and floured cake pans. For cupcakes, bake at 350 about 25 minutes. For a cake, bake at 350 about 45 minutes.
For the icing, I just made a cream cheese icing and piped the cupcakes. I sprinkled them with Valentine sprinkles, then used my heart candy cane creations to top them. Everyone loved them and they were delicious! I'm trying to think of any opportunity I have to bake this wonderful cake again :)
Can you make some of those for me next time I come to Hattiesburg??? Strawberry is my favorite CAKE!!!
