Fantasy Sweets

Well, last night was the finale of "The Bachelor".  The whole season was hard to watch and the finale continued this theme.  We all knew he'd pick the villain of the season, Courtney, but hoped that he'd wise-up and pick Lindzi.  Of course he did not.



I'm still trying to figure out what is most startling, the fact that he picked Courtney, or was it those awful CAPES that ABC made the girls wear as they walked to find their fate, or is it that Bachelor Ben looks EXACTLY like Francine from Arthur?????

Even sweet Bailey was "Team Lindzi"!

But really I watch "The Bachelor" just to have a fun girl's night at the finale!  Lots of fun, friends, and yummy treats.  I think I like our "Fantasy Sweets" better than the "Fantasy Suites" on the show!


This is the best thing I've made in a while.  Simple, delicious, and you can't stop eating it.
Fruit Salsa and Cinnamon Chips

Fruit Salsa
2 kiwis, peeled and diced
1 Fuji Apple, cored and diced
8 ounces raspberries, halved
16 ounces strawberries, diced
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fuit preserves, any flavor (I used strawberry)

In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and preserves. Cover and chill in the refrigerator at least 15 minutes.  It creates a simple syrup.  This needs to be served the same day, it begins to get too runny over time. 


Cinnamon Chips
10 (10 inch) flour tortillas
Butter flavored cooking spray
1 cup white sugar
2 tablespoons cinnamon

1. Preheat oven to 350 degrees.
2. Cut tortillas into wedges.
3. Mix sugar and cinnamon.
3. Spray cookie sheet with cooking spray, arrange tortilla wedges on sheet.  Coat wedges with spray and sprinkle cinnamon-sugar mixture.
4. Bake 8 to 10 minutes.  Cool.
I added a chocolate drizzle to my chips, that added a little extra yummy!


This recipe isn't a "fantasy sweet" but we also enjoyed it while watching the finale.
It's DE-LIC-IOUS!

Artichoke Loaf

1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup green onions, chopped
8 ounces cream cheese, softened
1/4 cup mayonnaise
1/2 cup sour cream
1/2 cup mozzarella, shredded
1/4 cup parmesan, grated
1 loaf Italian bread, sliced in half lengthwise

1. Mix the artichoke hearts, green onions, cream cheese, mayonnaise, sour cream, and both cheese (reserving some of the cheese).
2. Hollow 1/2 and inch of the center of both halves of the bread.
3. Spread the mixture into the hole in both slices of bread.  Top with reserved cheeses.
4. Bake in preheated 350 degree oven covered in foil for 25 minutes.
5. Remove foil and continue to bake until the cheese is melted and golden brown.


Next up in "The Bachelor" series, Bachelorette Emily beginning in May.  I guess I'll watch, if only to have another fun girl's night finale party!
