Recipe to share

I made this delicious casserole over the weekend.  The combination of Tropical Storm Lee and friends in from out of town for the Southern Miss football game made this a great "go-to" dish.

Mexican Casserole

Step 1: Brown one pound ground beef (I actually used ground turkey and it was equally as tasty).  Add one package of taco seasoning mix and follow the directions on the package.


Step 2: In a separate sauce pan, heat 1 can of refried beans.  Add one cup of salsa and one cup of grated colby-jack cheese. 


Step 3 - Spray casserole dish with non-stick cooking spray.  Layer two cups of crushed tortilla chips.


Step 4 - For the second layer, add the refried bean mixture.


Step 5 - Layer the seasoned taco meat next.


Step 6 - Chop 1/4 cup of green onions.  Sprinkle one cup grated cheese and green onions over casserole layers.


Step 7 - Bake at 375 degrees, for approximately 20 minutes, or until cheese is melted and hot throughout.  


Step 8 - Chop two roma tomatoes.  Sprinkle on top of casserole after removing from oven.  



Serve with guacamole and sour cream!  Delicious!!
