Yummy Peanut Butter Cup Cake!

I discovered this amazing cake on this great blog site. I, of course, couldn't wait to bake this cake! It has over 100 Reeses peanut butter cups! After spending what seemed like forever unwrapping miniature Reeses cups, it was time to bake this cake.

Here's the recipe!

1 box devil's food cake mix

1 small box of Jello chocolate pudding mix

1 cup sour cream

1 cup vegetable oil

4 eggs, beaten

1/2 cup milk

1 tsp. pure vanilla extract

2 cups chopped Reeses mini peanut butter cups

Mix all the ingredients together in a large mixing bowl, stir in the peanut butter cups last. The batter is very thick, so scoop it into three greased and floured cake pans and bake on 350 for about 40 minutes.

Now time for the frosting!

1 cup shortening (crisco)

4 cups of powdered sugar

1/4 tsp. salt

1 tsp. vanilla

1/3 cup heavy whipping cream

1/2 cup peanut butter

Cream the shortening, then slowly add the sugar. Then add salt, vanilla and whipping cream. Beat until fluffy. Now add in the peanut butter.

Layer the cake with the frosting. Adding lots of peanut butter cups to the outside of the yummy cake!

Although a little time consuming, this cake was absolutely delicious. I shared the cake with lots of people and only actually got one bite, but it was great! I'm thinking of making it into cupcakes to give to all my teacher friends for Halloween in the weeks to come!
