Happy Palm Sunday!
Easter is almost here, so I've been doing some baking over the weekend. I have several little events that need some sweet treats this week.
Easter nest - These are fun to top off with a Peep chick!
I saw these on Pinterest and they are SUPER easy! "Carrot" cupcakes!
"Bunny Bait" - Popcorn, pretzels, M&M's (I used milk chocolate and white chocolate M&M's), cover in white chocolate and sprinkle with Easter sprinkles.
Easter sugar cookies - These are always so pretty but TAKE.SOME.MUCH.TIME!
The eggs are my fav!
Last week I hosted Pokeno at my home. I made this strawberry lemonade from Pinterest. It was pretty good!
Here's the recipe -
Strawberry Lemonade: Homemade strawberry lemonade recipe, made in the blender using lemons, strawberries and honey. Replace lemons with limes for strawberry limeade.
Ingredients
- 1 ¼ lb strawberries, washed & cut in halves, about 4 cups
- 2 lemons, washed and quartered (use limes to make strawberry limeade)
- ~ ½- ¾ cup honey or sugar to taste, adjust based on your preference and sweetness of strawberries
- 6 cups of water
- Ice
- Garnishes: Strawberry slices, lemon slices and/or fresh herbs
Instructions
- Blend the strawberries, lemons and honey with 2 cups of water
- Strain the strawberry lemon mix, add the additional 4 cups of water through the strainer
- Taste and add additional honey/sugar if needed
- Serve cold over ice and garnished with strawberry slices, lemon slices and herbs
And it taste even better with cute polka-dot, paper straws!

While I am posting food and recipes I had to include this one. I also found this on Pinterest and these brownies are DELISH!
Ingredients
1 cup unsalted butter
1/2 cup cocoa
2 cups all-purpose flour
2 cups sugar
4 eggs
4 teaspoons vanilla
Melt butter. In mixer, add melted butter and coca, blend until smooth. Add flour and sugar. After mixed well, add eggs and vanilla. Mix until combined, do not over mix. Pour into a greased and floured 9x13 inch baking pan. Bake at 350 degrees for 20-25 minutes.
While they are baking, make the frosting -
1/4 cup unsalted butter, softened
1/4 cup milk
1/4 cup cocoa
3 cups powdered sugar
Mix all ingredients. Allow brownies to cool about 10 minutes then frost. Frost brownies while they are still warm.
After brownies are completely cooled. Cut into squares.
